Cullen Skink
Cullen Skink is a thick Scottish soup made of smoked haddock, potatoes and onions.
This soup is a local speciality, from the town of Cullen in Moray, on the north-east coast of Scotland. It's quick and easy to make and tastes great.

Scallops with Peppered Tangerine & Gravadlax Cream
Description
Perfect as a luxurious main course for any dinner party, served with braised fennel
Ingredients:
- 12 King Scallops
- 6 Tangerines (peeled, halved and pith removed)
- Pepper
- Olive Oil
For the Gravadlax Cream
- 200g Gravadlax (chopped)
- 250ml double cream
- Fish stock
Method:
For the Gravadlax Cream
Reduce fish stock with cream
When sauce coats back of spoon add chopped gravadlax
For the King Scallops
Heat pan until smoking hot
Season scallops on both sides
Add olive oil
Place scallops round the pan clockwise, remembering which one went in first
When the last one is in, wait 20 seconds and turn the first one and repeat round pan
Cook for a further 30 seconds
Remove scallops from pan and keep hot
Put the same pan back on heat
Pepper the tangerines
Add tangerines to pan
Cook until caramelised
Layer scallops onto a tangerine piece in centre of plate and drizzle with gravadlax cream
Serve with braised fennel
