Spring flavours from Skye
09/04/2010

Well, the clocks have gone forward so it's officially spring-time, and the lighter evenings make everyone that bit cheerier, don't they?
We've still got a smattering of snow here but, despite the weather, we've seen the first lambs out on the hills. Spring is such a mouth-watering time with lots of wonderful fresh flavours coming from the land and sea; our gravadlax really sings at this time of year, marinated and pressed in fresh spring dill, sea salt, crushed black pepper, sticky dark sugar and finest brandy.
If the light evenings mean that you're planning a bit more entertaining, our smokey roast salmon is absolutely luscious alongside some spring greens, or if you really want to impress; the flavour just bursts from our wild smoked salmon. Alternatively, order one of our selection boxes and give your guests a variety of delicious delicacies, fresh from the seas around the West Coast of Scotland and smoked in our famous kiln on Skye. Some warm crusty bread, a few garden-fresh salad leaves and you're good to go!
And any smoked salmon you have leftover from entertaining will be a treat for you with your scrambled eggs the morning after!
